通过近期对我园400多名幼儿的餐桌礼仪养成情况调查, 发现还存在许多不良现象:挑食、喂食、偏食、弃食等, 大多数幼儿在用餐过程中还没形成一套比较规范的餐桌礼仪, 相比较国外现阶段孩子的餐桌礼仪教育, 我们明显落后半拍, 为此, 幼儿园老师要协同家长, 把握幼儿餐桌礼仪教育的黄金时期, 刻不容缓, 把它作为送给孩子人生起步最好的礼物。

(一) 日本小学生的午餐实录。

来自日本武石小学的午餐实录:餐前都是帮厨的学生, 穿着白大褂, 戴着白口罩白帽子, 不管个子大小, 人人都要参加, 用餐时日本的小朋友都会自觉等客人坐下来, 才动筷子。牛奶喝完, 饭菜吃光光, 而且所有空牛奶瓶都是横着放在托盘, 以免端走时倾倒, 每个日本小朋友都养成这样的习惯。在每个日本小朋友的桌子上, 都有一个小小的牙缸, 吃饭后, 他们就立刻刷牙。先吃完的日本孩子开始自觉的擦桌子, 收拾餐具, 没有监工和指挥, 分工合作相当默契, 大家各自欢天喜地的找活干。

(一) 喂食:在家祖父辈经常追着跑着喂饭。有的孩子每顿饭都得到户外喂着才肯吃;有的孩子边骑童车爷爷边追着喂饭;有的孩子到了幼儿园还不会拿餐具, 得保育员喂饭。

(二) 挑食:刚上幼儿园的小班幼儿, 挑食现象比较常见:有的不吃蔬菜;有的不吃海鲜;有的不吃肉、蛋;有的不吃水果;还有的只吃饭和清汤, 其余一概不吃。老师把这些现象反馈给家长时, 发现大部分家长的态度是迁就和无奈, 既然不吃就算了, 这就是家长的养育态度造就的。

新年好!

新一期的《绅淑堂》又和大家见面了,这期的课堂正好赶在中国的新年,在座大部分同学都会和宾朋团聚。许多外国朋友也会到中国家庭过年,中国人认为,用餐不单是吃饭,也是头等重要的社交经验。今天我们的课堂就主要讲中式宴请宾朋和用餐的相关礼仪。

餐桌习俗

中国餐桌习俗对在座的外国朋友比较重要,因为中国人认为饮食与个人命运是息息相关的,如果用饭时犯了禁忌,便会惹来衰运。

比如在香港吃鱼,当吃完了一面鱼身,不要用筷子把整条鱼翻转至另一面,若翻鱼时弄破鱼身,便意味着渔船会翻沉,这是由于香港在开埠初期是一个渔港,渔民很关注船只的安全航行;不可用筷子垂直插入饭碗的中央,因这样有点像在拜祭祖先;用饭后不可说“我吃完了”,这意味自己已死去,不会再有机会吃饭,应说“我吃饱了”;吃完碗中不能剩饭,否则将来的太太或丈夫是“痘皮脸”。这些古老的饮食习俗流传至今成为饮食礼仪。基本文化讲完后我们现在讲整个用餐过程的礼仪!

请客的礼仪

请客需要提前几天通知!如果一月一日6:00入席的宴会,您当日5:50才打电话告诉别人:“唉!朋友,10分钟后到XX吃饭”。给人感觉是:“我这里缺人陪吃饭了,找不到合适的,临时拉你当替补,你赶紧过来吧” 这是非常不礼貌的。

请客的主人一定不能迟到!假如你是客人就可以稍稍迟到5-10分钟,但最好别提前好几小时就到了,守在酒店或者主人家里等着开饭是十分不礼貌的,给人感觉:我肚子饿了,我来守着你做,你可得弄快点、干净点,别往菜里头下毒啊。

入座的礼仪

先请重要客人和长者入座上席,圆桌对着大门的是主座,入座时要从椅子左边进入,主人右手边的是主客,左手边的是次重要的客人;坐在门边对着主人的,自然是跑腿招呼的陪客坐的啦。主人必须注意不可叫客人坐在靠近上菜的座位。此为一大忌。

入座后主人没有示意前不要动筷子。我曾经遇到一些性格活泼好动的男士,把筷子在盘子和碗上敲打,就像中国古代的编钟一样,筷子是进餐的工具,餐桌也不是演奏场地,把筷子当鼓槌是非常失礼的做法。

进餐的礼仪

上酒水上菜了!许多外国朋友都喜欢自夸手艺,国人可不兴吹嘘自己点的菜,主人家细心观察凉菜上齐、每位杯中都有酒水后,当立即举杯,欢迎开始之类的话,进餐期间,主人承担一个主动积极的角色——督促客人尽情吃喝。

客人夹菜时不可用筷子在一碟菜里不停翻动,应先用眼睛看准你想取的食物。用筷子去取一块食物时,尽量避免碰到其它食物。夹好菜后最好让筷子上的食物在自己碟中过渡一下才送入口中。使吃相看起来不那么急切。女士夹菜时,每次少一些,离自己远的菜就少吃。作为一个淑女千万不能站起来欠着个身子趴在桌子上夹离自己很远的菜,像这样!这样!呵呵,看你们笑得那么开心,一定要记住了哈,不要让自己成为别人的笑柄。

有的人吃饭喜欢咀嚼食物,比如干脆食物,发出很清晰的声音来,整个嘴巴像搅拌机一样,很没有风度,喝汤的话最好用汤匙一小口一小口地喝。不宜把碗端到嘴边,汤太热时可以等凉了以后再喝,不要一边吹一边“呼哧呼哧”的喝。

进餐过程中适时抽空和左右的人聊几句风趣的话,不要只低着头吃饭不管别人。如吃到菜肴有昆虫或碎石,轻巧的用拇指和食指取出,放入盘中。不要大惊小怪,宜候侍者走近,轻声告知侍者更换。

饮料和饮酒的礼仪

茶是中国人的日常饮料,席间任何一位都可为别人斟茶,次序由最长者至最年青者,最后为自己苦斟。当人家为你斟茶时,礼节上应该用手指轻敲桌子,这样做是对斟茶者表示感谢和敬意。
